Between 20th February and 30th March, our inspiration comes from the Mediterranean flavours of Sicily, deep in the south of Italy.

Sicily is much more than an Italian region; it has a very unique character. A history of invasion and conquest has resulted in a lavish mixed heritage and this wide range of influences can be seen in their food.

We’ll be using our favourite Cornish and Italian ingredients to create standout Sicilian dishes like caponata, a pale aubergine ragu; Palermo-style frittelle made with artichokes, peas and broad beans; arancini rice balls; and fresh tagliarini with sardines. Not forgetting of course classic Sicilian cassata and blood orange ice-cream.
