A Christmas Goose from Cornish Duck by Jane Sarchet

 

On a recent sourcing trip to Cornish Duck with the Fifteen apprentices, we had a little detour to visit the geese that are destined for the restaurant’s Christmas menu.

As I’d come to expect at Cornish Duck, the birds looked healthy and tremendously happy with plenty of space and lush green grass to roam.

It’s a shame that geese can’t appreciate a good view as their paddock overlooks a picturesque valley with the boughs of a giant old oak tree overhead. Visiting them was like taking a step back in time.

These birds hatched way back in May and take a full 7 months to reach the perfect weight for a truly traditional Christmas dinner. That’s a huge time commitment for a farmer and one of the reasons that an oven ready goose carries such a hefty price tag. In fact, you won’t be able to buy these birds via Cornish Duck as Tanya and Roger are rearing them exclusively for the Fifteen Christmas table.

I am really looking forward to seeing the full Christmas menu that Andy and the team come up with, I just know it’s going to be tasty!
