Apprentice Week 27 – 31 January

It’s been nearly sixteen months and our apprentices have been on quite a journey. Over the course of the last year, they have developed in confidence and skill, achieving their VRQ Level 1 and their NVQ Level 2 in professional cookery at Cornwall College.

With just under two months left before they graduate, the apprentices are now ready to take the next step. Under the watchful eyes of their mentors, the apprentices will be stepping into the shoes of the professional chefs in the Fifteen Cornwall kitchen and taking responsibility for their own sections.

In our world, we call this ‘Apprentice Week’ a key milestone in the programme, marking their personal and professional development from white hat to black hat.

We caught up with a couple of the apprentices and asked them what they were looking forward to most about Apprentice Week, and what they hoped to achieve. Jordan George, 19, from Penzance said: “I’m really looking forward to Apprentice Week; mostly I’m looking forward to the challenge. I think it will help me to have confidence in myself as a chef, and hopefully lead me on to becoming a professional chef in the near future.” Mike Hodgson, 18, from Treviscoe added: ”I’m working on prep so I’ll be preparing for lunch service, making sure the vegetable stock is ready and also sorting out the staff tea! I think it’ll show how we work together as a team, how I can work on my own and putting the skills I have learnt over the last year to the test.”

Following apprentice week they just have over four weeks left in the kitchen before they all go their separate ways for the month of March to go to their work placements. In the past Fifteen Cornwall has had great support from Paul Ainsworth, The Soho House Group, The Vineyard, Chris Eden at The Driftwood and Rick Stein. Following this they will graduate from the programme in April and then go on to work as professional chefs in kitchens across the country.
