Apprentice week & new adventures

We’ve reached the end of Apprentice Week, where our apprentices took centre stage and under the watchful eyes of our professional chefs put the past 18 months of training under the spotlight and ran breakfast and lunch service throughout the week.

Understandably they’re feeling pretty tired but are really pleased with how the week went.   We’ve had some great feedback from our diners and the apprentices certainly rose to the occasion.  Here’s a sneaky peek of some of the dishes they created this week.

radiatori, lamb ragu polenta, verdure miste, squash fritti
Mozza, pear, hazelnuts hake, lentils, psb

Sadly for us, our Apprentices only have a couple of weeks left in the Fifteen Cornwall kitchen before they all go off on their work placements around the country,  where the next phase of the adventure begins for them.  The work placements will provide them with valuable experience  and confidence of working in other kitchens, restaurants and businesses.  Here’s where they are off to:

James – The Idle Rock, St Mawes, Cornwall and Emma – The Cornwall, St Austell, Cornwall
Carla- River Cafe, London Libby- Hell Bay, Bryher, Isles of Scilly
Jade – The Alverton, Truro, Cornwall Lauren- Strong Adolfos, Wadebridge, Cornwall
Stevie- Barbecoa, London Jen- Oliver’s, Falmouth, Cornwall
