Blood Orange Mojito Recipe

A delicious and easy cocktail to recreate at home now the clocks have moved forward and the days are becoming longer and lighter.  This mojito is guaranteed to bring sunshine to your glass!

Ingredients:

Half blood orange or naval orange
Half a lime
2 teaspoons of brown sugar
10 mint leaves
40ml Appleton Estate VX rum or your preferred gold rum
Crushed ice
Soda water
10ml Napolean Manderin liqueur – nice to add if you have it

Garnish:

Orange peel
Mint stem

Method:

Add the blood orange, lime juice and brown sugar to a glass and muddle.

Add the mint leaves (slap them in the palms of your hand first to release the flavour), rum and half fill the glass with crushed ice….. stir!

Fill up the rest of the glass with crushed ice and top with the Napolean Manderin liqueur if you have some.  Top up with soda water.

To garnish, peel some rind from the blood orange (a potato peeler is a useful tool for this job), trim the edges and twirl around a straw, add the coil of orange peel to the top of the crushed ice.  Tuck a stem of mint into the side of the glass, add two straws beside the mint, then sit back in a sunny spot, watch the sun set and enjoy!
