It’s no secret that here at Fifteen Cornwall we have a serious obsession with food and Chocolarder founder and head chocolatier, Mike Longman is a man after our own heart.
Mike’s vision has always been to create real chocolate without compromising on his ethical beliefs. Every batch is produced with an attention to detail bordering on the obsessive, handmade from minimal ingredients, sourced ethically. Taking the cocoa beans through each stage of the process to a finished, packaged bar takes around six weeks but countless delighted customers and several awards clearly show it’s worth it.
Chocolarder began when Mike moved to Cornwall and started working in a kitchen that sourced ingredients directly from local farms, growers and producers. One of the few exceptions to this sourcing policy was chocolate.
Mike began looking into how chocolate was produced and recognised an industry in need of change. At that time, bean-to-bar or craft chocolate making was still a micro industry and Mike found the need to become an inventor of chocolate-making equipment in order to achieve the desired results.
