Cornish Summer Cocktail
We asked Enzo, one of our very talented bar staff, to create a seasonal cocktail. This is his refreshing ‘Cornish Summer’ cocktail, which would be perfect to sip on a sunny summers day. The best news is Enzo would like to share his recipe with you, so you can recreate it at home. Here’s how it’s done.
50ml of your favourite gin (we used Elemental a Cornish gin)
25ml elderflower liquid or elderflower syrup*
50ml pressed apple juice (we used Healeys who are again Cornish)
2″ fresh chopped celery
2″ fresh cucumber
Mint, basil or your favourite herb to garnish
*Elderflowers are currently in season, so if you can’t source either of these ingredients you can make your own syrup by boiling some Elderflower heads with water and sugar. Alternatively use pressed apple and Elderflower juice
Muddle the cucumber and celery
Add all liquids to a cocktail shaker
Vigorously shake for 7.5 seconds, alternatively blend in a blender.
Double strain into a pre-chilled martini, stemmed glass or vessel of your choice
Garnish with your favourite herb and enjoy!
