Autumn in Cornwall is all about food, where new season produce and rainy days encourage us to head back inside, get cosy and enjoy the season’s offerings until our heart’s content. And our new autumn menu is designed to do just that. Head Chef Adam Banks has been working hard in the kitchen to find exciting ways to use this season’s produce to create a new menu that combines Cornish flavours with an Italian influence.
Fall for new autumn dishes
Primi dishes are full of autumnal ingredients like fig and plum that capture a taste of the season and create sweet and salty flavour combinations. Choose from Prosciutto di San Daniele with Italian black fig, toasted almond and mustard cress. Or enjoy charred English plums, soaked in vinegar to cut through sweetness, with Cacioricotta cheese, watercress and hazelnut.
Our pasta and risotto dishes have also made a seamless transition from summer to autumn with seasonal ingredients creating rich and decadent flavours. Enjoy farfalle with Cornish duck liver, red wine, sage and pancetta as well as aged carnaroli risotto with roasted pear, creamy taleggio cheese from Northern Italy, crispy rosemary and walnut, perfect to warm you up on those chillier days. And for secondi, tuck into heartier dishes that blend Italian and Cornish ingredients like whole roasted partridge on Coombeshead sourdough with slow cooked Italian cannellini beans and sage, or fish of the day with potatoes grown locally on Zucca farm with Cornish mushrooms and taggiasche olives.
Finish your experience with modern takes on comforting classics with our pastry chef Mariana’s autumnal inspired Dolci. Savour roast apple with apple compote and honey cake or Amalfi inspired lemon posset with a lemon caramel, sourdough and thyme crisp with a splash of limoncello.
