Fifteen Friday Face- John Relihan 21st June
This week our Apprentices are up in London, enjoying Taste of London food festival and exploring the wonderful restaurants the city has to offer. It’s also a chance for them to meet some more of the Fifteen family. One former graduate of Fifteen London; John Relihan is now cooking with flames at Jamie Oliver’s barbecue steakhouse, Barbecoa. We caught up with John at Taste of London, here’s his answers to our Friday questions…
What do you do when you are at Barbecoa?
“I’m Senior Sous Chef”
What do you do when you are not at Barbecoa?
“I really like to eat out or cook at home, I’ve actually just bought a new webber BBQ so it’s getting a lot of use when we get the little sun we have.”
How was your first day at Barbecoa?
“My first day, overwhelming. HUGE restaurant and a lot of equipment, robata, wood fire oven, smoker. All things I’ve never worked with before.”
Tell us about the best dish you have ever eaten at Barbecoa…
“For me it’s the rump steak. The flavour is immense. Charcoal ash cooked aubergine really adds something special, and that’s my favourite cut to dry age.”
Tell us about your favourite drink?
“Fontodi Chianti Classico, one of the first wines I ever tried during a sourcing trip when I was an apprentice. Great memories whenever I taste it, warms you up and makes a good night a great one.”
What would be your ‘Desert Island Disc’ (album)?
“Not too sure, if I had to pick I’d probably say Bob Marley. In my head this desert island is a very relaxed place and that’s such a good album to relax with.”
What would be your desert Island ingredient?
“Orange. You can make a fire out of the skin and its full of vitamin C.”
Who would you invite to your Last Supper?
“If it had to be just one person then I would say my mother; she’s good fun.”
