What do you do when you are at Fifteen London?
“Cor blimey, where do you start? I go in in the morning check the menus, check the produce, check what we sold. I change the menu daily so there’s a lot to do. I chat to suppliers and get cooking and don’t look back till 12.”
How was your first day at Fifteen Cornwall?
“Hectic, Jamie whizzed me around the whole place, looking at the whole empire. Being introduced to the apprentices was a daunting feeling, but it was a lovely, lovely day. Everyone was welcoming, that does make you feel like you’re part of a big family.”
Tell us about the best dish you have ever eaten at Fifteen…
“I think it’s got to be truffle linguine or a crab linguine is really nice actually.”
Tell us about your favourite drink?
“A G and T is probably up there, that or a beer.”
What would be your ‘Desert Island Disc’ (album)?
“That is such a bad question, what would you do with an album? You’d need something to play it on.”
Jon, you can have a stereo to listen to it on…
“God, I’ll come back to it. I have a much better question for you…”

“You should ask people what ingredient they would take to a desert island.”
Ok, I like it. What would you desert island ingredient be?
“A chicken, I’d roast it. There is nothing like the smell of a roast chicken.”
Who would you invite to your Last Supper?

“Probably a bit of bobby Womack, something I could listen to again and again. I’m loving his new album.”
