What do you do when you are not at Fifteen Cornwall?
“Socialising and generally having a good time and exploring the world of food.”
How was your first day at Fifteen Cornwall?
“Well, I’ve actually had two first days! The first as a ‘White Hat’ (Apprentice Chef) and the second as black. Both were exciting, a little scary and a bit surreal. It’s weird having such a big opportunity and when you realise that is a reality it is surreal, but cool.”
Tell us about the best dish you have ever eaten at Fifteen Cornwall…
“Tough, really, really tough. We get to work with such amazing stuff. I’d have to actually go for the rotolo Steve and Banksy made a couple of days ago with Italian sausage, cavolo nero, mascapone and loads of lovely herbs, in a lemon butter sauce- incredible.”
Tell us about your favourite drink…
“It’s got to be a dark rum with ginger beer, lime and a lime wedge. I believe it’s called a Dark and Stormy.”
What would be your ‘Desert Island Disc'(album)?
“Thats tough I have so much on my ipod. It would have to be a compilation, I think Mowtown Top 50.”
What would be your desert Island ingredient?
“Wine, you can drink it and it makes everything taste good.”
Who would you invite to your last supper?
“Rose Gray- incredible, massive inspiration for me, I’d also have to have Ruth Rogers, I had the pleasure of working with her and learnt so much. I think Mick Jagger would be hilarious, I’d have Alan Carr too and I have got to have a woman I fancy, so Mila Kunis.”

“How about asking everyone which restaurant they’d most like to visit?…I’d go to Tom Kerridge’s, The Hand and Flowers, Marlow.”
