Today is the start of Art8, Newquay’s festival of art and culture. Tomorrow as part of the festival, our charity The Cornwall Food Foundation are running ‘The Art of Pasta’ workshops in Newquay town where pasta chef and graduate Michael Mallett will be sharing his pasta making skills. We caught up with him before tomorrow’s workshops…
What do you do when you are at Fifteen Cornwall?
“Pasta mainly as I run the pasta section at the moment.”
What do you do when you are not at Fifteen Cornwall?
“I exercise a lot, I do CrossFit and Boxing.”
How was your first day at Fifteen Cornwall?
“Loads of media attention as I was in the first cohort of apprentices when we opened. Lots of camera crews, quite overwhelming.”
Tell us about the best dish you have ever eaten at Fifteen Cornwall…
“Anything I cook, ha!”

“I love mojitos; they are so fresh and minty.”
What would be your ‘Desert Island Disc'(album)?
“I think Fat Freddie’s Drop would suit an island lifestyle.“
What would be your desert Island ingredient?
“I’d take peaches, I love eating peaches!”
Who would you invite to your last supper?
If you could eat dinner at any restaurant this evening where would it be and why?
“Massimo Bottura’s Osteria Francescana, because the food looks amazing and not pretentious”
