Fifteen Recipes of Christmas- Andy Appleton’s Festive Insalata of San Danielle, Mozzarella and Clementines
Our Head Chef Andy Appleton says “This is a really fantastic salad to start with on Christmas Day. It’s light and packed with amazing flavour combinations – the ham with a touch of saltiness, a little sweet, creamy mozzarella and the palate cleansing clementines!”
(for 4 persons)
8 slices of San Daniele ham
2 large balls of the best mozzarella you can find
2 ripe clementines
200ml of extra virgin olive oil
200g of micro cress or rocket
Cornish sea salt
Arrange your slices of ham on the plate.
Tear your mozzarella into approximately six pieces per ball and arrange over the four plates.
Next, peel your clementines and slice crossways into 6 and lay three slices on each plate. Season the dishes with the sea salt and black pepper.
Scatter the washed and dried micro herbs/rocket over the four plates and finish with a glug of the best olive oil you can buy.
