Fifteen Recipes of Christmas- Kelly Riddle’s Peppermint Cream Stars
When our very own Kelly Riddle was a child she used to make peppermint creams with her mum in the run up to Christmas each year. As one big kid she keeps the tradition going and this year shared the minty love in our homemade secret santa. Make your very own peppermint starts for after dinner treats or handmade gifts by following Kelly’s simple recipe. The egg white can be substituted for pasteurised egg white or condensed milk.
225g icing sugar
1 egg white
1/2 to 1 teaspoon peppermint essence, or to taste
Edible glitter and silver spray are great for jazzing these up, but definitely optional.
Sift the icing sugar into a large bowl.
In a separate bowl, whisk the egg white with an electric whisk for 30 to 45 seconds until the egg white is light and fluffy.
Add the egg white and the peppermint essence to the icing sugar and mix well. The mixture should be firm; add more icing sugar if necessary.
Roll out the mixture on a surface sprinkled with icing sugar. You may also want to rub some icing sugar on the rolling pin to make sure the mixture doesn’t stick. Roll to a thickness of approximately 1cm, and cut into festive shapes.
Lay out to dry on a tray lined with greaseproof paper.
Decorate with edible glitter or spray if you fancy, then enjoy!
