Fifteen Recipes of Christmas- Nathan Outlaw’s Lobster Cocktail

Two Michelin starred chef, Nathan Outlaw is passionate about Cornish seafood. Follow his recipe for a luxurious lobster cocktail to be the hostess with the mostess this Christmas. This recipe makes 20 canapé sized portions perfect to serve with Champagne at pre-christmas drinks.  For a show-stopping start to your Christmas Dinner  make 10 double sized portions.

Ingredients (Serves 20)

The meat from 4 cooked medium lobsters

For the Mayonnaise:
4 egg yolks
20ml white wine vinegar
Juice of 1 orange
500ml rapeseed oil
Salt to taste

For the garnish:
20 basil leaves
2 oranges
4 baby gem lettuce
2 treviso radicchio
1 bunch of spring onions

Salt and black pepper for seasoning

Method

For the Mayonnaise:
Place all of the ingredients except the oil into a food processor and blend until smooth. Gradually add the oil until the mixture thickens to form a firm mayonnaise. Season with salt and add more orange juice to taste. You can keep this refrigerated for up to 3 days.

For the garnish:
Remove the skin and pith from the oranges with a sharp knife, and cut out the segments. Cut the segments in half, ready to serve. Remove the outer leaves from the baby gem lettuce and radicchio and cut the remaining leaves in half, length ways. Slice the spring onions finely. Slice the basil, just before serving.

To serve:
Dice the lobster meat into rough 1cm-2cm cubes and mix with the sliced basil, spring onions and mayonnaise, using just enough to bind the lobster together. Adjust the seasoning with salt if required. In some small glasses, build the lobster cocktail by alternating the leaves, orange segments, and lobster mayonnaise. Finish with a crack of black pepper and a few small basil leaves for garnish. A few slices of sourdough on the side wouldn’t do any harm!
