Fifteen Recipes of Christmas- Paul Ainsworth’s Recipe for Tiramisu in a Jar

From Rojano’s, here’s Paul Ainsworth’s take on the popular Italian dessert tiramisu. Make them in jars and keep them in the fridge for impromptu festive suppers with unexpected, but very welcome guests, or serve them as sweet canapés at a Christmas drinks party!

Ingredients

(Serves 8)

For the cream:

480g double cream

50g icing sugar

265g mascarpone

25ml coffee essence

50ml Tia Maria

 

For the sponge:

35ml Tia Maria

35ml Amaretto

150ml espresso

150g ladies fingers

 

Method

For the cream:

1. Whip double cream into soft peaks.

2. Add all the other ingredients together in a separate bowl and mix thoroughly.

3. Slowly stir both mixtures into one, making sure they don’t split.

 

For the sponge:

1. Break the sponge fingers in half and lay out on a tray.

2. Pour all 3 liquids onto the sponge, making sure they are evenly spread.

3. Leave to soak for an hour before use.

 

To finish:

1. Use a small (cup sized) jar; layer the sponge and cream (Paul does two layers of each), adding a small sprinkle of grated dark chocolate between each layer.

2. Finish the top with a cream layer then another sprinkle of chocolate and cocoa powder.
