All Italian: Karl & Charlie

Karl Jones is our Training and Development Chef and Charlie is one of our Cohort 13 apprentices. Karl has been working with our apprentices since Fifteen began and picked out a dish to teach to Charlie that Gennaro showed to the team a little while ago.

How did you come across the recipe? Gennaro visited the kitchen and talked through the dish with a previous Cohort and showed us how he liked to cook it which was really inspiring for the students. One thing that stood out for me about it was the fact he put olives and capers through it towards the end of the cooking process, which is something I hadn’t thought about doing – a nice twist on the dish.

Why did you decide to share this dish with Charlie? It’s a big favourite of Gennaro’s and we’re a big favourite of Gennaro because he’s an amazing mentor and a big supporter of what we do here at Fifteen. For a student to be learning a dish that has been passed on by Jamie’s mentor, down to Jamie, down to our kitchen and down to our students is really special – Jamie’s a big fan of passing on the knowledge.

Were there elements of the dish that were challenging for Charlie? Yes, to prepare cuttlefish on its own is quite an achievement for any of the students, something they never would have come across before. When there’s something like cuttlefish in the kitchen, it’s always nice to have them inspired about something a little bit different that they wouldn’t have come across in college or before joining us at Fifteen. It’s a great challenge for them.

What top tips would you give when for making this dish? Add loads of parsley at the end and good olive oil. It’s a dish that can be learnt don’t rush, take your time and keep tasting. I always encourage everyone to keep tasting and adjust the seasoning if necessary.

Charlie, how did you find recreating Gennaro’s dish? It was really good fun. I’ve never prepped or cooked cuttlefish before so it was really exciting to try something new and create a dish with it.
