The team of Chefs only work with the highest quality, freshest, ingredients and the menu changes daily depending on what’s delivered to the kitchen door that morning.
Here are some of examples of what the Chefs have been cooking up lately and what you can expect from the team this summer.
Rib-eye (Cote de Boeuf) steak
This bone in Rib-eye (Cote de Boeuf) steak was cooked on the Josper grill, which means it is cooked quickly at a high temperature, reducing cooking time, retaining flavour and leaving a slightly charred outside, but juicy inside.
The steaks are provided by Warrens Butchers who use traditional breed, grass fed, suckled beef from local farmers on Bodmin Moor, Dartmoor and surrounding areas. They dry age and butcher the old fashioned way. The marbled fat in these steaks melts during the cooking process keeping the meat moist and enhancing the flavour.
Junior sous chef Jack Bristow made the smoked butter which accompanies this dish.
The freshest sea food
Another Fifteen Cornwall take on surf and turf. The Lee Carter’s lobster caught in Cornish waters is quickly wood fired in the Josper grill, leaving it tender with a smoky flavour. This makes the perfect accompaniment to the dry aged short rib from Warrens butchers, slowly cooked with vegetables, red wine, herbs & beef stock leaving a rich meaty ragu, served with polenta chips.
The freshest summer fruits
Eton Mess Fifteen Cornwall style. The strawberry, meringue and vanilla mascarpone dessert really showcases the succulent, sweet strawberries from Buttervilla, who are based in the Tamar Valley and grow on a small scale using traditional methods. The fruit is picked fully ripe & delivered in hours for that special freshness that sets Fifteen Cornwall apart.
