Producer Profile: The Cornish Seaweed Company
During June we are highlighting the relationship we have with one of our local suppliers – the Cornish Seaweed Company. Head Chef, Andy Appleton has been working with Caroline and Tim since last year, introducing Cornish Seaweed as an ingredient into many of our dishes, following our menu philosophy of creating Italian food with a Cornish twist. Their approach is provide a sustainably harvested, local, edible seaweeds that is an alternative food source which is healthy, nutritional and tasty. Caroline and Tim say:
“We really hope and believe that seaweed becomes part of everyone’s diet and that we come to recognize it for what it is. A superfood, both environmentally and nutritionally”
At the Cornish Seaweed Company they process and package a variety of different Cornish seaweeds using traditional and sustainable methods. The products can be bought online and in Cornwall you can buy it in Helston, St Ives, Falmouth, Truro and St Austell. There are also a number of outlets it is available in Bristol, London and Southampton.
They also provide a number of lovely recipes on their website, or alternatively you can take a peek at our recipe of the month – Cornish Fish Stew with ‘Ndjua Crab Toast or last months’s Squid Ink Garganelli – both using seaweed from the Cornish Seaweed Company.
