A sneak peek

It seems summer has finally arrived and we can’t get enough of the glorious sunshine. Summer at Fifteen Cornwall is all about wide open windows at lunch, stunning summer sunsets at dinner and wave watching at breakfast. Plus of course, all the delicious summer produce arriving in the Fifteen Cornwall kitchen.

From antipasti to dolci, we’ve got dishes with ingredients that take you on a tour of Cornwall and Italy. Perfect for leisurely lunches, celebratory dinners or simply making memories on your summer getaway.

This week our restaurant team got a sneak peek and opportunity to try some of the new summer dishes our head chef Adam Banks and his team of talented chefs have been working hard to create.

Start with primi dishes full of contrasting flavour combinations to tantalize your taste buds like creamy burrata; a double poached mozzarella from Puglia paired with succulent sweet Italian peach, Cornish basil and pesto. Smokey Prosciutto di San Daniele form North East Italy, aged for 16 months with pickled Sicilian cherries, hazelnuts for crunch and mustard cress from Padstow Kitchen Garden. Sommelier Greg says ‘it’s absolutely calling out for a Lambrusco alongside’.

A must try is the Panzanella salad a traditional Italian dish from Tuscany, with beautiful Buttervilla tomatoes, Coobeshead bread and capers. It’s sweet, light and fresh with a high acidity from the white wine vinegar that runs through the dish. Choose a selection for the table to share to really start your dining experience.

Our pasta and risotto section remains a firm favourite with guests and don’t disappoint this summer. Choose squid ink bucatini a tubular pasta served al dente with clams and sweet Italian datterini tomatoes, finished with grated bottarga di muggine, a Sardinian speciality of mullet roe pressed in beeswax to add a salted favour to the dish.

Our luxurious risotto savours fresh summer flavours, with zucchini, oregano, almonds and mint with a salted ricotta generously grated on top.

And a must try new dish is Dunderi with peas and mint, small ricotta dumplings similar to gnocchi are a speciality from the Amalfi coast and served in a butter sauce.

As always our Secondi dishes showcase the best of Cornish meat and fish. Feast on chargrilled lamb leg from Philip Warren based in North Cornwall, charred in the josper for added depth of flavour and served with sweet Cornish carrots and Sardinian pecorino. Smokey mackerel with Newlina’s fine beans, tomato, garlic and parsley or ask about our fish of the day.

Our vegetarian chickpea farinata returns, full of fresh summer ingredients of broad beans, mint, peas and fine beans. Upgrade your secondi dish and choose one of our delicious contorni dishes or select a few to share.

Finish your experience was something savoury or sweet or perhaps skip straight to a Digestif. With Cornish and Italian cheeses, chocolate or fruity desserts there’s something for everyone.
