Guest chef collaboration: Tom Adams, Pitt Cue & Coombeshead Farm founder & chef

Tom Adams, founder of Pitt Cue, is a true British barbecue pioneer and has built a reputation for his American-inspired barbecue cooking.
He recently opened Coombeshead Farm, a rural retreat based in Lewannick, Cornwall along side his business partner April Bloomfield, who holds a Michelin star at two of her six Manhattan restaurants in America, The Spotted Pig and The Breslin, both of which are Gastro Pubs ‘pairing quintessentially British food with a deeply Italian influence’.
Tom will join the Fifteen Cornwall chefs to create a very special feasting menu where they will be cooking suckling pigs on a fire pit oven built on Watergate Bay beach.
With eight guests to each of the ten tables, sharing plates each course, this will be an evening for feasting and bringing people together around one table. Here’s the menu to whet your appetite.
Mylor prawns, Amalfi lemon aioli
Beef tartar, nasturtium, cured egg yolk, sourdough cracker
Agnolotti of crown prince squash, roast chicken brodo, chestnut and crispy sage
Wood roasted suckling pig
Porcini spelt and rye, black truffle
Padstow Kitchen Garden brassicas, mustard vinaigrette
Plum and custard jelly, pomegranate and praline
You will need to pre-book for this event due to limited spaces. Arrival time 7pm for a 7.15pm sit down go to these guys. Due to the style of cooking for this event vegetarian options will not be available.
