Tiptoe Thursday Tipple- Gordy tells all about a new South African addition to our list!

OK, with the help of our Head Sommelier Gordon Lawrence I’ll introduce this weeks Tiptoe Thursday Tipple.
The addition of the charcoal fired Josper oven to our new kitchen was a great excuse to new additions to our list. Gordon and his team have choosen wines that aim to complement and enhance the bold smoky flavours created by our chefs. I caught up with Gordon our head sommelier to talk us through one of his favourite additions to our list, Columella.
Tell us about the wine…
“This is the Columella, it’s made with grapes predominantly from Swartland in South Africa. The blend is 75% Syrah, 23% Mourvedre and 2% Grenache. It’s made by a radical, young wine maker, Eben Sadie who is dedicated to producing wine of the highest quality and in my opinion the sort of guy who is the future of wine making in The Cape.”
What is it about Columella that made you choose to add it to the Fifteen Cornwall Wine List?
“I really like it’s purity and structure. It carries it’s 14.5% well and it retains a real freshness despite the grapes being grown in a hot climate.”
What food would you pair Columella with?
“Some serious Cowage or Lambsy. No, it’s got to be Lambsy, it’s got that Rhone thing going on, full on fruit, some herb, and enough structure and alcohol to cut through the richness of lamb.”
I thought the Columella tasted fantastic, a lovely tarrieness which makes it perfect with the charred, smokey flavours of our Josper fired food. If it sounds like your type of tipple come down to the restaurant and taste it for yourself!
