Tasting Menu pasta
Senior Sous Al and Tom looking through menus at the pass. These two make sure the kitchen runs like a well-oiled machine, checking dishes, calling orders and supporting the rest of the team.
Our Prep team - Irmas and Little Ricky D - support the kitchen team with sorting produce and preparing ingredients for service.
Our Pasta Chefs - Steve, Josh and Carla - are one of the integral parts of our kitchen team. Always creative and up for a laugh, they make fresh and seasonal pastas every day for lunch and dinner service.

We are devastated to be losing three of our longstanding chefs from the Fifteen family. Tom Vose is leaving his Senior Sous position after 9 years with us, Little Ricky D has been with us for 12 years and is leaving his Senior Chef de Partie role and Basso, Cohort 5 graduate is moving on from his Senior CDP role.

When asked what his job is, Tom doesn’t talk about knife skills: “I’m mostly a parent, executioner, mentor, councillor and also chef.”
